For those whom do not know about Nicolas Vahé, he is a Chef based in Denmark and his brand is one of the four under Danish design firm House Doctor. NUMBER OF PERSONS 4

INGREDIENTS*
1 roll of goat cheese
4 radishes
2 pears
400 g baby leaf salad
½ dl lemon juice
2 tbsp. walnut oil
1 tbsp. honey
Balsamic vinegar glaze
Salt and Pepper
20 Walnuts
Chives

Cut the goat cheese in approx. 2 cm thick slices.
Wash radishes and pears, and cut both into thin slices.
Wash and dry the baby leaves.
Mix a dressing: lemon juice, walnut oil and honey.
Season with salt and pepper.
Add the dressing to the baby leaves.
Arrange the goat cheese on a plate together with the sliced pears, radishes, walnuts and top up with the green salad and balsamic vinegar glaze.
Sprinkle with chives.
